Help Builder allows you to mark text as 'Code' using the 'PRE' icon on the editor toolbar (also activated by pressing Alt-C on a text selection). This in turn will allow you to pop up a dialog that lets you select how the 'code' is to be marked up.

Source code can be marked up as the following:

To do this, start by selecting some text. The Code Highlighting dialog will pop up:

The colors of the highlighting are configured in the CSS Style Sheet for the project. There's a general section of codecs at the bottom of the CSS style sheet followed by a set of specific style tags for each of the languages.
